On the other hand, by Handson is the next chapter of this restaurant, built on the original foundation of a steakhouse, but no longer held by it. After everything we’ve been through, we chose to cook our own food, with the ingredients we love, and to play with it the way we believe it should be expressed. The same goes for our cocktails and wine selection, shaped by what we trust and what we stand behind. We believe the food and the place we’ve created are not based on any standard, but on who we are, in this out-of-the-ordinary world.
Kyle Lee is a chef shaped by years of working across different kitchens, cities, and cultures. Born in Korea and raised in Canada, his approach to cooking comes from experience rather than tradition alone — combining fine dining discipline with instinct, curiosity, and a strong respect for ingredients.
By Handson reflects the way he wants people to dine: good food, good wine, honest hospitality, and dishes that carry meaning beyond presentation. Instead of following one specific cuisine or trend, the menu is built around seasonality, memory, technique, and flavour.

By Handson is also shaped by Cassidy — a pastry chef and cook driven by imagination, emotion, and instinct rather than convention. Her creations come from the world she lives in internally: memories, art, color, movement, and feeling. The cocktail program was never built from a traditional bartender’s perspective, but from her way of connecting flavors like chapters in a story, linking dishes and moments together through taste. Influenced by her Vietnamese roots and a palate drawn to tropical, vibrant flavors, her work brings softness, curiosity, and unpredictability into the restaurant. She was never meant to fit inside a box, and that personality quietly lives throughout By Handson.
